"TBHD" - Pancake Cake with Maple Cream Frosting

Fall is in the air here in the Canyon and after dealing with some technical issues with our Friday Dessert Challenges from our current cookbook "The Beekman's 1802 Heirloom Dessert Cookbook" I am pleased and excited to announce we are back on track and would like to kick off the fall festivities with "Pancake Cake with Maple Cream Frosting", page 186.
This dessert was surprisingly rich and very tasty. It is a great, quick, yummy treat that you can make using leftover pancakes. Several of the kids suggested making the traditional buttermilk pancakes and then adding fresh strawberries and cream in the layers. For others they thought bananas and Nutella would be yummy, as for me I think warms apples and caramel sauce would be good.

We added...
1/2 teaspoon of dried ginger to the pancake mix and grated some milk chocolate over the top for decorative garnish.

Thirtfy Thursday... Blackberry Lemonade (DYI Sports Drinks)

Yesterday, I started back on the "Couch 2 5K" plan. I have decided to do this for a couple of reasons.

#1... I have plateaued on my weight lose adventures.
#2... I feel soggy and unhealthy.

Today on the C25k Facebook page there was a link to www.active.com, that featured a discussion about sports drinks and how you can make your own. I am not a big fan of sports drinks, but the article got us here at the pantry thinking about fun summer chillers that we could make at home that would still meet the criterial of a sports drink. Which the article stated as being: "The nutritional profile of most commercial sports drinks is approximately 50 calories, 14 grams of carbohydrate and 110 grams of sodium per 8-ounce serving."

This one is our favorite so far...

Ingredients
  • 1/2 cup fresh blackberries
  • 1/2 cup country time pink lemonade
  • 1/8 teaspoon salt
  • 4 fresh lime wedges
  • 1/2 cup orange juice
  • 2 tablespoons lemon juice
  • 4 cups cold water
Dissolve lemonade mix and salt in water, add orange juice, lemon juice and blackberries. Stir and chill. When ready to serve fill each glass with ice and squeeze 1 lime wedge into each glass (serves 4). Pour lemonade mix over ice and serve.

Peach Wedding Punch - Davis Wedding

We had a very wonderful and successful evening. It was our first official catering event here in Myrtle Beach and it went off without a flaw. We made all the food for the buffet, we also provided the dividing wall and extra touches. Our menu included a Chocolate Fountain with dip-able goodies like, strawberries, cherries, marshmallows, pineapple, bananas and oreos. We also served chickens salad filled cream puffs, veggie tray, peel & eat shrimp, baked cheese & southern style pimento cheese ball with crackers, and our new...

Peach Wedding Punch

1 container of Tropicana Peach Orchard Punch
1 (2 liter ) bottle Sprite
1 cup V-8 Splash Tropical Blend

Chill all at least three hours before serving, this makes one full punch bowl and for 200 people you will need at least 4 punch bowls full. Also if you would like to add the fruited ice ring that you see pictured, it is very easy to do, but remember it needed to be put into freeze the night before.

To make the ice ring, we use a bunt pan with a center cone. Place all of the following in the bottom of the pan, cover with water (about 4 cups) and freeze until solid.
1 large can of Mandarin Oranges drained
9 maraschino cherries
9 mint leaves
5 slices of limes
5 slices of lemons
